One of the first direct products of pistachio which is known in all different countries is the pistachio kernel, the pistachio kernel is the only edible part of the pistachio that can be used directly after harvesting and after the pistachio has ripened on the tree and When it reaches its brain, it becomes completely flowery and ripe.

The naming of the common types of this product is often based on the export pistachio types produced in Iran, i.e. Akbari, Ahmad Aghaei, Badami, Kole Ghochi and Fandagi. Of course, in terms of quality and method of preparation, Iran’s typical exported pistachio nuts are divided into several different categories, including healthy, toothed, softened pistachio nuts, and wheat pistachio nuts.

The quality of pistachio nuts exported by Iran varies according to the region, as well as how to harvest and maintain the pistachio tree. For example, in a certain area of Rafsanjan, especially in the Noug area, the most production of pistachios is Ahmad Aghaei type, when this type of pistachio is fully ripe, it has a very red flowered pistachio nut, which is often called Matiki flowered pistachio nut.

Among the types of pistachio nuts, due to the more reasonable price, more pleasant appearance and also the green color of the shell, the most used pistachio nuts are hazelnuts, which are used a lot for export, and in fact, it is one of the types of pistachio nuts. It is considered an export of Iran, which is produced and exported in high volume.

Another reason why hazelnut pistachio kernels are used a lot is that hazelnut pistachios are one of the smallest types of pistachios, and it is economically more profitable to sell their kernels with export or even domestic quality.

Common pistachio nuts are used for salting, preparation of pistachio nut products such as slices and powder, as well as in foods such as pastries and in the production of various types of transfer, and for this reason, it has many export fields.
